Episode #6 - Quick and Easy Pizza

Blueberry Danish Pizza
Asparagus Chicken Ranch Pizza
Italian Pepperoni and Spinach Pizza
Spaghetti Pizza

 

Blueberry Danish Pizza

1 Thin pre-made white pizza crust
Butter to coat crust
1 pkg. cream cheese, softened
1 egg
1 can Blueberry pie filling (or any fruit)
Powdered sugar
Crushed pecans

Pre-heat oven to 375°. Place pizza crust on a pizza pan. Generously brush melted butter on crust. Pop in oven for only minutes while preparing filling. Mix cream cheese with egg until smooth. Remove crust from oven. Spoon cream cheese mixture over crust, then top with blueberry pie filling. Return to oven for 10-12 minutes. Sprinkle with pecans. Garnish with powdered sugar when slightly cooled. Cut like pizza or smaller portions for a great party finger food.

 

Asparagus Chicken Ranch Pizza

1 Whole Wheat Boboli pizza crust
¼ cup Ranch dressing
1-2 cups shredded Monterey Jack cheese
1-2 cups Rotisserie shredded chicken
6 slices of cooked, crumbled bacon
1 onion, sliced thin
1 bunch asparagus, tossed with olive oil
Extra virgin olive oil

Pre-heat oven to 375°. Layer all listed ingredients on pizza crust. Remember to toss asparagus in olive oil before layering. Bake until crispy and cheese in melted, approximately 10-15 minutes. Do not overbake.

 

Italian Pepperoni and Spinach Pizza

1 Whole Wheat Boboli pizza crust
2 T. Extra virgin olive oil to spoon over crust
1-2 cups Provolone cheese
1 cup pepperoni slices
1 15oz. can fire roasted tomatoes, drained
2 cups fresh spinach, chopped, tossed with 1T. extra virgin olive oil
Italian seasonings and additional olive oil to drizzle over pizza before baking

Pre-heat oven to 375°. Layer all ingredients. Remember to coat spinach with olive oil before layering. Bake until crispy and cheese is melted, approximately 10-15 minutes. Do not over bake.

 

Spaghetti Pizza

Crust: (makes 2 crusts)
1 small package whole wheat (whole grain) spaghetti noodles
½ cup Parmesan cheese, grated
1 T. Italian seasoning
1 egg
¼ cup cream (or canned evaporated milk)

 

Topping: (for 1 pizza)
1 cup spaghetti sauce (per pizza)
1-1/2 cups shredded cheddar cheese
1 pound lean ground beef
1 large yellow onion, chopped
4 cloves garlic, chopped
1 small can mushrooms (per pizza)
Olive oil to drizzle over assembled pizza
Italian seasoning to sprinkle over assembled pizza

Pre-heat oven to 375°. Cook spaghetti according to package directions. Drain and mix with next four ingredients. Coat oven-proof dish with olive oil and press spaghetti mixture into dish pressing firmly to form crust. Bake uncovered for 10 minutes. While crust is baking, cook ground beef, onions and garlic. Drain. Remove crust from oven and spoon sauce over crust. Layer the remaining ingredients, starting with the cheese. Generously drizzle olive oil and sprinkle Italian seasoning over entire pizza. Pop back in oven for additional 10-15 minutes. Watch for cheese to melt. Slice and serve immediately.
